Billy, a light meal or snack typical Gunungkidul. Gatot usually consumed to accompany tea or coffee. Often served to entertain guests who visit. In the past, gatot made for personal consumption, but now has become a commodity traded. Billy can be found in traditional markets or by central-by Gunungkidul.
Billy is a food made from cassava (cassava / dried cassava) is equal to tiwul. Cassava that have been peeled and then dried in the sun to dry so that it becomes dried cassava. But to make gatot quality, not just any cassava is used. Gatot traders who usually doubles as a maker (manufacturer) using dried cassava which (deliberately) dihujan-hujankan. The goal is to get the typical black color gatot. "gatot ingkang sekeco ingkang wernan'e ireng" said mbah Mijem, one of the sellers in the market gatot Playen. To anticipate the dry season, it usually has a stock of material gatot maker (the rain dried cassava).
Ways of making gatot very simple. Billy is already dry soaked for 12 hours (overnight). Once washed, dried diced to size gatot, then cooked / steamed for about 2 hours. After cooking, gatot placed in a container that width quickly let cool. To serve, sprinkled with grated coconut gatot plus a little sugar and salt.
